Common questions about casein

What is the difference between acid casein, lactic casein and rennet casein?

All three are grades of the same product and differ in how the curd is separated. Lactic casein is precipitated with lactic acid, acid casein with a mineral acid such as hydrochloric or sulphuric, and rennet casein is coagulated enzymatically so it keeps its calcium phosphate. That last difference is why rennet grades are used for cheese analogue work.

Is casein the same as sodium caseinate?

No. Sodium caseinate is a separate grade made by dissolving acid casein in alkali and drying it, which turns an insoluble curd into a water-soluble protein. If the formulation needs solubility, order the caseinate by name and state the cation, because acid casein will not dissolve in its place.
