Common questions about modified starch
What is the difference between native and modified starch?
An untreated starch granule swells and thickens, then loses that viscosity under a long cook, low pH or hard shear, and separates after a freeze cycle. Modification changes the granule so the paste holds through those conditions. Untreated tapioca and maize starch are separate products with their own specifications, so order the one the process needs by name.
Which modification should I ask for?
Match it to the stress in the process. Cross-linked grades take retorting, acid and shear, acetylated and hydroxypropylated grades handle chilling and freezing, pregelatinised grades thicken without cooking, and oxidised or acid-thinned grades give low viscosity at high solids for paper, textile and adhesive work.
Does the base starch matter, or only the modification?
Both matter, which is why buyers ask for modified tapioca starch or modified corn starch rather than the class alone. Tapioca and waxy maize give clearer, longer-textured pastes, regular maize a firmer opaque gel, and potato builds viscosity fast. Switching base changes texture at the same modification.
Is modified starch the same as maltodextrin?
No. Maltodextrin is a hydrolysed starch bought as a soluble carrier and bulking agent, while modified starch keeps its granule structure and is bought to thicken and stabilise. They are ordered separately, so name the one the formulation calls for.
Do you supply food grade and technical grade?
Enquiries for either are welcome, and the two are not interchangeable. Sauce, dairy and noodle plants work to a food specification, while paper, textile, adhesive and oilfield buyers work to a technical one at a different price level. Say which side the requirement sits on.
Is this the same as the starch ether used in tile adhesive?
No. The hydroxypropyl starch ether dosed into dry-mix mortar and tile adhesive is a construction admixture with its own specification and buyer. Order it by that name rather than as modified starch so the enquiry reaches the right material.
